Covered markets are found in almost every town surrounding La Maison Paul and boast an array of cured meats, free range eggs and cartloads of freshly picked fruit and vegetables. There are numerous varieties of cheese including the region’s famous mountain-sourced Fromage du Brebis (made from ewe’s milk) and Tomme des Pyrénées. With the Basque country so nearby, you’ll also find that gourmet cured sausages are a common feature on market stalls, as is the delectable Jambon de Bayonne and small red ‘Espelette’ peppers. It is best to visit the markets in the morning as many vendors close up shop in the afternoon.
